Key Lime Pie

Ingredients

  • 4 large egg yolks
  • 1 x 400g condensed milk
  • 4 limes, 1 zested and all 4 juiced
  • 1 readymade sweet pie base

Directions

  1. Preheat the oven to 150C
  2. In a bowl, with an electric mixer beat the egg yolks until they are thick and turn pale yellow. Turn the mixer off and stir in the condensed milk
  3. Turn the mixer back on low and mix in half of the lime juice. Once the juice is incorporated, add the other half of the juice and the zest and mix until just blended
  4. Pour the mixture into the pie base and bake until set, about 12 minutes
